   To open a bottle of still wine, remove the foil capsule and wipe the top of the bottle. Insert the corkscrew and pull the cork. You may need to wipe around the rim of the bottle again.

   Opening a bottle and leaving it to stand is thought to allow the wine to take up oxygen and so age quickly. In fact, the amount of air that gets to the wine is minimal   and will not make a great deal 

of difference.

   Wine taste best when served at the correct temperature. If you have ever tasted a bottle of unchilled white wine you will know that the taste seem flat. Correctly chilled wine tastes lighter, fresher and fruitier, but wine that has been over-chilled loses much of its flavor.

   The recommendation used to be to serve red wine at room temperature and white wine at cellar temperature. The best way to chill wine if you are in a hurry is to use a ice bucket. Fill it with ice cubes and water, rather than ice alone, and push the bottle in as deeply as it will go. The wine will chill in about 15 to 20 minutes. This is a much quicker way of achieving the correct temperature than placing the bottle in the freezer. This method can also be used to cool down red wine that is too warm. Allow about five minutes in this case.
